I love one dish meals

Here is a great one dish meal.

4 servings

1-2 lbs. salmon fillets
1 carrot
1 pkg. sliced mushrooms
1 or 2 zuccini halved and sliced
1 or 2 squash halved and sliced
peanut oil or butter
1/3 cup white wine
green onions
salt and pepper.

Heat oven to 350 degrees
Heat oil or butter in oven safe frying pan and add carrots and mushrooms and saute for 1-2 minutes. Add sliced zuccini and squash and wine, cook three minutes. Salt and pepper to taste, add salmon on top, salt and pepper the salmon. Let cool a bit. Place foil over pan and add top (create a seal, the fish will steam cook in the pan). Cook for about 10 min. in oven. Fish should just flake, perhaps being a bit translucent in the middle. Take off foil and add chopped onions on top. Serve immediately.
